Job Summary:
The Supervisor – Onion Dehydration & Milling is responsible for supervising end-to-end operations including onion dehydration, milling (powder/granules), grading, and packing, while ensuring quality, hygiene, safety, and production targets are achieved.
Key Responsibilities:

Supervise onion dehydration process: cleaning, peeling, slicing, drying, cooling, grading, and packing

Oversee milling operations: grinding, sieving, particle size control, and powder handling

Ensure proper operation of dryers, slicers, mills, sieves, and packing machines

Monitor critical parameters such as moisture %, temperature, milling fineness, and yield

Ensure compliance with food safety standards (FSSAI, GMP, HACCP)

Maintain hygiene, sanitation, and housekeeping across dehydration and milling areas

Control cross-contamination and ensure proper segregation of flakes, granules, and powder
-
Manage manpower including helpers, machine operators, and packing staff

Reduce wastage, rejections, and material loss during dehydration and milling
-
Coordinate with Quality team for in-process, milling, and final product checks

Maintain batch records, production logs, milling reports, and shift-wise documentation

Ensure PPE usage, safety procedures, and dust control in milling area

Report daily production, breakdowns, and deviations to Production Manager
Skills & Competencies:

Knowledge of onion dehydration and milling processes

Understanding of dryers, hammer/pin mills, sieves, and moisture control

Awareness of food hygiene, sanitation, and dust management

Manpower handling and shift coordination

Basic production reporting and documentation skills
Qualification:

B. Tech / B.E. (Food Technology / Production / Mechanical preferred)

Minimum 1 year + experience in onion dehydration, spice, or food milling unit
